  5. PECAN DELIGHT PIE

  8. The is one of those "pie a la Mom" recipes, but it's virtually goof-proof!
  9.  
  10.     3 egg whites, room temperature, beaten stiff
  11.     1 cup sugar
  12.     1 1/4 tsp baking powder
  13.     1 cup crushed (not pulverized) soda crackers
  14.     3/4 cup chopped pecans
  15.     1/2 cup finely chopped dates
  16.     1 tsp vanilla
  17.     whipped topping to cover (preferably real whipped cream)
  18.     optional toasted pecans for garnish
  19.  
  20. Beat egg whites until stiff peaks form, then combine sugar and baking powder.
  21.  
  22. Fold in crackers, pecans, dates and vanilla; pour into greased 9-inch pie pan.

  24. Bake at 300deg for roughly 25 minutes or until a toothpick inserted into the
  25.     center of the pie comes out clean.  Beware overcooking!

  27. Allow pie to cool then top with whipped cream and remaining pecans.

  30. Serve in small slices with lots of coffee -- this is REALLY rich.
